Chicken Cacciatore and Roasted Butternut Squash



Here is an incredible recipe made from fresh ingredients.  It is wonderful eating delicious food and knowing that every bite is good for your body!  The flavors come together really well and it was not too complicated for me to make.  To save a little time, I had pre-cut the onions, red peppers and separately the squash so when it was time to make dinner they were ready.

Chicken Cacciatore
3lbs bone-in chicken breast halves, skins removed.
3/4 t salt
1 t pepper
1/4 c olive oil (again- I used grapeseed oil)
2 c sliced onions (about 3 medium)
2 t minced garlic (I love the jars of minced garlic I can keep in the fridge)
4 medium red peppers, cored, seeded, cut into 1/2 in strips
1/4c chicken broth (low sodium preferred)
28 oz canned whole tomatoes, drained and chopped (organic tomatoes are best if you can find them)
1 t oregano
1/2 t rosemary
1/4 t crushed red pepper flakes
1/2 lb mushrooms
2 T parsley

Rub chicken with salt and pepper.  Cook chicken in skillet with oil for 4-5 min each side.  Move chicken to plate.
Place onions in pan for 5 min.  Add garlic and red peppers for another 5 min.  Move veggie mix to a plate.
Add broth in skillet over high heat for 1 min.  Add tomatoes, oregano, rosemary, red pepper flakes for 2-3 min simmering.  Add in chicken, onions, and red peppers. Cover and cook for 10-15 min.  Cover.
Cook mushrooms in a separate pan with a little oil.  When done, add them to chicken.  Garnish with parsley.

Serves 6.  Claims prep time is 25 min and cook time is 40.  It seemed a little longer to me.

Herb-Roasted Butternut Squash
(I halfed this recipe knowing only Andy and I would probably like it)

 2.5-3 pounds of butternut squash, peeled and cut into 1 in cubes
4 large shallots, peeled and only cut in half
1 T rosemary
1t minced thyme
3/4 t salt
1/2 t pepper
3T olive oil (though lately we are using grapeseed oil when things are cooked with high heat- try it!  )
1 medium garlic bulb

Preheat oven 400F
Place first 7 ingredients in ziplock bag so all ingredients are well coated.  Then place on baking sheet.

Cut garlic bulb removing the top 1/3.  drizzle with a little olive oil.  sprinkle with salt and pepper.  wrap the garlic bulb in foil and place on the baking sheet with the squash.

Roast for 20 min.  Stir.  Bake another 20-25 min.
Remove garlic and squeeze cloves from skin and stir them with squash.
Serve!  MMmm
